Crispy Roasted Potato Salad

A delicious take on potato salad featuring crispy roasted potatoes and turkey bacon.

Ingredients

  • 2 pounds baby potatoes
  • 4 strips turkey bacon
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 green onions, sliced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, then toss with olive oil, salt, and pepper.
  3. Spread the potatoes on a baking sheet and roast for 25-30 minutes until golden brown and crispy.
  4. Meanwhile, cook the turkey bacon in a skillet until crispy, then chop into pieces.
  5. In a large bowl, combine Dijon mustard, apple cider vinegar, and remaining olive oil.
  6. Add the roasted potatoes, turkey bacon, green onions, and parsley to the bowl, and mix well.
  7. Serve warm or at room temperature.

Notes

  • For added flavor, consider adding some crumbled feta cheese on top before serving.
  • Let the salad sit for a few minutes to allow the flavors to meld.
