- 2 pounds baby potatoes
- 4 strips turkey bacon
- 1/4 cup olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 green onions, sliced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes, then toss with olive oil, salt, and pepper.
- Spread the potatoes on a baking sheet and roast for 25-30 minutes until golden brown and crispy.
- Meanwhile, cook the turkey bacon in a skillet until crispy, then chop into pieces.
- In a large bowl, combine Dijon mustard, apple cider vinegar, and remaining olive oil.
- Add the roasted potatoes, turkey bacon, green onions, and parsley to the bowl, and mix well.
- Serve warm or at room temperature.
