Crispy Zucchini Fritters

Made with fresh zucchini, these crispy fritters are the perfect appetizer or side dish.

  • 2 medium zucchinis
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup vegetable oil for frying

Instructions

  1. Grate the zucchinis and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
  2. In a large bowl, combine flour, Parmesan cheese, eggs, black pepper, garlic powder, and onion powder.
  3. Add the grated zucchini to the mixture and stir until well combined.
  4. Heat oil in a skillet over medium-high heat.
  5. Drop spoonfuls of the mixture into the hot oil and fry until golden brown on both sides, about 3-4 minutes per side.
  6. Remove from the skillet and drain on paper towels.
