- 2 medium zucchinis
- 1 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 cup vegetable oil for frying
- Grate the zucchinis and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
- In a large bowl, combine flour, Parmesan cheese, eggs, black pepper, garlic powder, and onion powder.
- Add the grated zucchini to the mixture and stir until well combined.
- Heat oil in a skillet over medium-high heat.
- Drop spoonfuls of the mixture into the hot oil and fry until golden brown on both sides, about 3-4 minutes per side.
- Remove from the skillet and drain on paper towels.
