Crispy Zucchini Fritters are a delicious twist on a classic recipe, featuring turkey bacon for added flavor.

  • 2 medium zucchinis
  • 1 teaspoon salt
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 4 slices turkey bacon, cooked and crumbled
  • 2 tablespoons olive oil

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel; squeeze out excess moisture.
  2. In a large bowl, combine the zucchinis, salt, parmesan cheese, breadcrumbs, eggs, garlic powder, black pepper, and turkey bacon; mix well.
  3. Heat olive oil in a skillet over medium heat.
  4. Scoop tablespoons of the mixture and place in the skillet; flatten slightly.
  5. Cook for 3-4 minutes on each side, or until golden brown.
  6. Remove from the skillet and place on a paper towel to drain excess oil.

Notes

  • For a gluten-free version, use gluten-free breadcrumbs.
  • These fritters are best served immediately but can be reheated.
