- 2 cups grated zucchini
- 1 cup all-purpose flour
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil (for frying)
- Grate the zucchini and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
- In a mixing bowl, combine the grated zucchini, flour, egg, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the batter into the skillet, flattening them slightly.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove from the skillet and place on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
