Crispy Zucchini Fritters

Delicious, crisp zucchini fritters that are easy to make and perfect for any meal!

Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil (for frying)

Instructions

  1. Grate the zucchini and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, flour, egg, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Drop spoonfuls of the batter into the skillet, flattening them slightly.
  5. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. Remove from the skillet and place on paper towels to drain excess oil.
  7. Serve warm with your favorite dipping sauce.

Notes

  • For crispier fritters, make sure to squeeze out as much moisture from the zucchini as possible.
  • These fritters can be made ahead of time and reheated in the oven.
