- 2 cups cooked, shredded chicken
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1/2 cup onion, diced
- 1 cup frozen peas
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 tsp thyme
- 1 tsp garlic powder
- 1/4 tsp black pepper
- 1 package (1 lb) refrigerated pie crusts
- In a Crock Pot, combine the shredded chicken, carrots, celery, onion, and peas.
- In a bowl, mix together the cream of chicken soup, chicken broth, thyme, garlic powder, and black pepper. Pour this mixture over the chicken and vegetables.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the veggies are tender.
- Before serving, roll out the pie crust on top of the mixture and cut slits for venting.
- Cook for an additional 30 minutes to 1 hour until the crust is golden brown.
Notes
- For a richer flavor, add in some fresh herbs.
- Feel free to use leftovers from a roast chicken.
