Crock Pot Chicken Pot Pie

  • 2 cups cooked, shredded chicken
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1/2 cup onion, diced
  • 1 cup frozen peas
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 tsp thyme
  • 1 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 package (1 lb) refrigerated pie crusts

Instructions

  1. In a Crock Pot, combine the shredded chicken, carrots, celery, onion, and peas.
  2. In a bowl, mix together the cream of chicken soup, chicken broth, thyme, garlic powder, and black pepper. Pour this mixture over the chicken and vegetables.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the veggies are tender.
  4. Before serving, roll out the pie crust on top of the mixture and cut slits for venting.
  5. Cook for an additional 30 minutes to 1 hour until the crust is golden brown.

Notes

  • For a richer flavor, add in some fresh herbs.
  • Feel free to use leftovers from a roast chicken.
