  • 4 large russet potatoes
  • 1 medium onion
  • 2 cloves garlic
  • 32 ounces chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup cooked bacon, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Peel and dice the potatoes, then add them to the slow cooker.
  2. Chop the onion and garlic, and add them to the slow cooker with the potatoes.
  3. Pour in the chicken broth and add salt, pepper, and paprika.
  4. Cook on low for 6-8 hours or until the potatoes are tender.
  5. Once cooked, mash the potatoes slightly in the pot.
  6. Stir in the heavy cream and shredded cheese until melted and smooth.
