Crockpot Black Bean Soup

A warm and hearty soup perfect for any occasion, featuring turkey bacon and black beans.

Ingredients

  • 1 cup dried black beans
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup diced tomatoes
  • 1 bell pepper, chopped
  • 1 bay leaf

Instructions

  1. Rinse the black beans and place them in the crockpot.
  2. Add vegetable broth, onion, garlic, cumin, chili powder, turkey bacon, diced tomatoes, bell pepper, and bay leaf.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beans are tender.
  5. Remove the bay leaf before serving. Enjoy!

Notes

  • For a thicker soup, blend a portion of the soup after cooking.
  • Feel free to add in any other veggies you have on hand!
