- 1 cup dried black beans
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 slices turkey bacon, cooked and crumbled
- 1 cup diced tomatoes
- 1 bell pepper, chopped
- 1 bay leaf
- Rinse the black beans and place them in the crockpot.
- Add vegetable broth, onion, garlic, cumin, chili powder, turkey bacon, diced tomatoes, bell pepper, and bay leaf.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beans are tender.
- Remove the bay leaf before serving. Enjoy!
