Crockpot Chicken and Dumplings is a warm and comforting dish that is perfect for busy weeknights. This easy recipe combines tender chicken with fluffy dumplings in a delicious broth.

  • 2 pounds chicken thighs
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 can cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 package refrigerated biscuit dough

Instructions

  1. Place the chicken thighs in the crockpot.
  2. Pour in the chicken broth and add the carrots, celery, cream of chicken soup, garlic powder, onion powder, thyme, and black pepper.
  3. Cook on low for 6-8 hours or on high for 4 hours.
  4. In the last 30 minutes of cooking, drop biscuit dough on top of the chicken mixture.
  5. Cover and cook until the biscuits are cooked through.
  6. Serve hot and enjoy!

Notes

  • For added flavor, you can sauté the vegetables before adding them to the crockpot.
  • Feel free to substitute other vegetables such as peas or green beans.
