Ingredients

  • 2 cups shredded cooked chicken
  • 1 can enchilada sauce
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 2 cups shredded cheese
  • 12 corn tortillas, cut into strips

Instructions

  1. In a crockpot, combine chicken, enchilada sauce, black beans, and corn.
  2. Layer half of the tortilla strips over the mixture followed by half of the cheese.
  3. Repeat layers with remaining ingredients.
  4. Cover and cook on low for 4-6 hours.
  5. Serve warm and enjoy!

Notes

  • This dish can be spiced up with additional jalapeños.
