  • 1 pound chicken thighs, diced
  • 4 slices turkey bacon, chopped
  • 1 cup white rice
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup green peas

Instructions

  1. In a crockpot, combine chicken thighs, turkey bacon, bell pepper, onion, and garlic.
  2. Add diced tomatoes, chicken broth, rice, Cajun seasoning, salt, and pepper.
  3. Mix well and cook on low for 6-8 hours.
  4. In the last 30 minutes, add green peas and stir.
  5. Serve hot and enjoy!

Notes

  • This dish can also be made with shrimp or sausage for added flavor.
  • Adjust the spiciness by adding more or less Cajun seasoning.
