  • 1 pound chicken breast
  • 1 can coconut milk
  • 4 cups chicken broth
  • 2 cups mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 cup snow peas
  • 2 green onions, sliced

Instructions

  1. Add chicken breast, coconut milk, chicken broth, mushrooms, onion, garlic, ginger, red curry paste, and fish sauce to the crockpot.
  2. Cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through.
  3. Shred the chicken and return to the soup.
  4. Stir in lime juice and snow peas, and cook for an additional 15 minutes.
  5. Garnish with green onions before serving.
