Crockpot White Chicken Chili

This creamy and hearty crockpot white chicken chili is perfect for cozy nights in. Easy to make and packed with flavor!

  • 2 pounds boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup sour cream
  • 1 cup shredded cheese

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the beans, corn, onion, garlic, chicken broth, and spices.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Once cooked, shred the chicken and return it to the pot.
  6. Stir in sour cream and cheese until melted and combined.
  7. Serve hot, garnished with additional cheese if desired.

Notes

  • For a thicker chili, mash some of the beans before adding them.
  • Customize the spice level by adjusting the cayenne pepper.
