- 2 pounds boneless, skinless chicken breasts
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 cup diced onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- 1 cup sour cream
- 1 cup shredded cheese
- Place the chicken breasts at the bottom of the crockpot.
- Add the beans, corn, onion, garlic, chicken broth, and spices.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Once cooked, shred the chicken and return it to the pot.
- Stir in sour cream and cheese until melted and combined.
- Serve hot, garnished with additional cheese if desired.
Notes
- For a thicker chili, mash some of the beans before adding them.
