- 2 pounds potatoes, peeled and diced
- 1 cup cheddar cheese, shredded
- 4 cloves garlic, minced
- 1 medium onion, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- In a large pot, sauté the onion and garlic until fragrant.
- Add the diced potatoes and vegetable broth. Bring to a boil and simmer until potatoes are tender.
- Blend the soup until smooth, then return it to the pot.
- Stir in the cream, cheddar cheese, parsley, thyme, salt, and pepper. Heat through.
