  • 8 ounces ditalini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook ditalini pasta according to package instructions; drain and rinse under cold water.
  2. In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over the pasta salad and toss to combine.
  5. Chill in the fridge for at least 30 minutes before serving.
