- 4 cups onions, thinly sliced
- 4 strips turkey bacon, chopped
- 4 cups beef broth
- 1 cup white wine
- 2 tablespoons olive oil
- 1 teaspoon thyme, dried
- 1 tablespoon sugar
- Salt and pepper to taste
- 1 loaf French bread, sliced
- 2 cups Gruyère cheese, shredded
- In a Dutch oven, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add olive oil to the pot, followed by the sliced onions. Cook until caramelized, about 30 minutes.
- Stir in the sugar, thyme, salt, and pepper.
- Deglaze the pot with white wine and cook for 5 minutes.
- Add beef broth and the cooked turkey bacon back into the pot. Simmer for 20 minutes.
- Preheat the broiler. Ladle soup into oven-safe bowls, top with bread and cheese.
- Broil until the cheese is bubbly and golden.

- For a richer flavor, use homemade broth.
