- 1 pound chicken breast
- 4 slices turkey bacon
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chiles
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 cup diced onion
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese for topping
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- Add diced onions, bell pepper, and garlic to the pot and sauté until softened.
- Stir in the chicken breast, taco seasoning, and chicken broth. Bring to a simmer.
- Cook until the chicken is cooked through, about 15 minutes. Remove chicken and shred.
- Add the shredded chicken back to the pot along with black beans, corn, and diced tomatoes. Stir well and heat through.
- Serve with crumbled turkey bacon and shredded cheese on top.
