Easy Creamy Lasagna Soup

  • 1 pound ground turkey
  • 2 slices turkey bacon
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 can crushed tomatoes (28 oz)
  • 4 cups chicken broth
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground turkey and turkey bacon, cooking until browned.
  3. Stir in onion and garlic, cooking until soft.
  4. Add Italian seasoning, crushed tomatoes, and chicken broth. Bring to a simmer.
  5. Add broken lasagna noodles and cook until tender.
  6. Stir in ricotta cheese, mozzarella cheese, and spinach until melted and combined.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with Parmesan cheese.
