Easy Shepherd's Pie

Experience a delicious twist on the classic shepherd’s pie with the addition of turkey bacon.

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 2 cups mashed potatoes
  • 1 cup frozen peas and carrots
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, cook the turkey bacon until crispy, then remove and chop.
  3. In the same skillet, cook the ground turkey until browned.
  4. Add the onions and garlic, cooking until softened.
  5. Stir in peas, carrots, chicken broth, Worcestershire sauce, thyme, and season with salt and pepper.
  6. Simmer for 5 minutes then transfer to a baking dish.
  7. Spread mashed potatoes over the filling, topping with chopped turkey bacon.
  8. Bake for 20-25 minutes until the top is golden.
  9. Let cool for 5 minutes before serving.

Notes

  • For a creamier topping, mix in a bit of sour cream into the mashed potatoes.
  • Feel free to add other vegetables like corn or green beans.
