  • 1 pound salmon fillet
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1 teaspoon rice vinegar
  • 4 strips turkey bacon
  • 1/4 cup green onions, chopped
  • 1 sheet nori, shredded

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the sushi rice under cold water until clear, then combine with water in a rice cooker and cook according to instructions.
  3. While the rice cooks, prepare the sauce by mixing mayonnaise, sriracha, and soy sauce in a bowl.
  4. Once the rice is cooked, stir in rice vinegar and spread it in a baking dish.
  5. Top the rice with the salmon fillet, then spread the sauce mixture over the salmon evenly.
  6. Cook the turkey bacon in a skillet until crispy, then crumble and sprinkle over the top.
  7. Bake in the oven for about 20-25 minutes until the salmon is cooked through and flakes easily.
  8. Garnish with green onions and nori before serving.

Notes

  • Feel free to adjust the spice level by adding more or less sriracha.
