Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

Delicious and nutritious stuffed shells filled with spinach and ricotta cheese for a wholesome meal.

Ingredients

  • 12 large pasta shells
  • 1 cup ricotta cheese
  • 1 cup spinach, cooked and chopped
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a bowl, mix the ricotta cheese, cooked spinach, mozzarella cheese, parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. Stuff each pasta shell with the cheese and spinach mixture.
  5. Spread 1 cup of marinara sauce at the bottom of a baking dish.
  6. Arrange the stuffed shells in the dish and top with the remaining marinara sauce.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes or until bubbly.
  8. Let cool slightly before serving.

Notes

  • You can add more vegetables to the filling, such as mushrooms or bell peppers.
  • These stuffed shells can be made ahead and stored in the refrigerator before baking.
