Easy Stuffed Pepper Soup Recipe

A hearty and comforting stuffed pepper soup, packed with turkey bacon and loads of flavor, perfect for a cozy dinner.

  • 1 lb ground turkey
  • 4 slices turkey bacon
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 1 cup uncooked rice
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and crumble.
  2. In the same pot, add ground turkey and cook until browned. Add onion and garlic, sauté until translucent.
  3. Stir in diced bell peppers, diced tomatoes, chicken broth, rice, and seasonings.
  4. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until rice is tender.
  5. Stir in crumbled turkey bacon before serving.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Feel free to add more vegetables like corn or zucchini for added nutrition.
