Easy Thai Shrimp Fried Rice

  • 2 cups cooked jasmine rice
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1/2 cup peas and carrots
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 eggs, beaten
  • 2 green onions, sliced
  • 1 tablespoon lime juice
  • salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Stir in the shrimp and cook until they turn pink.
  4. Add peas and carrots, followed by cooked rice.
  5. Pour in soy sauce and fish sauce, stirring well.
  6. Create a well in the center, pour in beaten eggs, and scramble.
  7. Mix everything together and finish with green onions and lime juice.
  8. Season with salt and pepper, then serve hot.
