  • 6 slices bacon
  • 1 cup ricotta cheese
  • 1/2 cup shredded cheese (such as cheddar or mozzarella)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 green onion, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the bacon until crispy, then crumble it into small pieces.
  3. In a mixing bowl, whisk together the eggs, ricotta cheese, salt, and pepper.
  4. Stir in the crumbled bacon and chopped green onion.
  5. Grease a muffin tin and pour the egg mixture evenly into the cups, filling each about 2/3 full.
  6. Sprinkle shredded cheese on top of each cup.
  7. Bake for 20-25 minutes or until the eggs are set and lightly golden on top.
