Egg, Bacon, and Ricotta Breakfast Cups

Ingredients

  • 4 strips bacon
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh chives
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the bacon until crispy, then crumble it.
  3. In a bowl, whisk together the eggs, ricotta cheese, mozzarella, chives, salt, and pepper.
  4. Grease a muffin tin and evenly distribute the crumbled bacon.
  5. Pour the egg mixture over the bacon in each muffin cup.
  6. Bake for 20-25 minutes or until the eggs are set.
  7. Allow to cool slightly before removing from the muffin tin.
