  • 1 teaspoon salt
  • 2 cups marinara sauce
  • 1 cup all-purpose flour
  • 3 eggs
  • 2 cups breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle them with salt. Let them sit for 30 minutes to draw out moisture.
  3. Rinse the salt off and pat the eggplant slices dry.
  4. Set up a three-bowl system for breading (flour, beaten eggs, breadcrumbs).
  5. Dredge each slice of eggplant in flour, then egg, then breadcrumbs.
  6. Fry the breaded eggplant in a skillet until golden brown on both sides.
  7. In a baking dish, layer marinara sauce, eggplant, Parmesan cheese, and mozzarella cheese, repeating layers.
