Enchilada Soup Recipe

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add chicken, black beans, corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes.
  4. Serve hot topped with shredded cheese and cilantro if desired.

Notes

  • For added heat, include fresh jalapeños or hot sauce.
  • This soup can be made ahead and reheated.
