Ingredients

  • 8 ounces pasta of your choice
  • 1 cup roasted butternut squash
  • 1 cup kale, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup toasted walnuts, chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine the roasted butternut squash, cooked pasta, kale, cranberries, feta cheese, and walnuts.
  3. In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss until well combined.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.
