Fire Garlic Enoki Mushrooms with Vermicelli Noodles

  • 200 grams enoki mushrooms
  • 100 grams vermicelli noodles
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon chili oil
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame seeds
  • 2 stalks green onions, chopped

Instructions

  1. Soak the vermicelli noodles in hot water for about 10 minutes or until soft, then drain.
  2. Heat vegetable oil in a pan over medium heat and add minced garlic, cooking until fragrant.
  3. Add the enoki mushrooms and stir-fry for a few minutes until they are tender.
  4. Pour in the soy sauce and chili oil, stirring to combine.
  5. Add the drained vermicelli noodles into the pan and toss everything together.
  6. Top with sesame seeds and green onions before serving.

Notes

  • For extra heat, add more chili oil.
  • Can substitute enoki mushrooms with shiitake or button mushrooms if desired.
