- 1 whole chicken, cut into pieces
- 2 cups long-grain rice
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 4 cups chicken broth
- 1 teaspoon saffron or turmeric
- 1 bell pepper, sliced
- 2 tomatoes, diced
- 1 cup green peas
- Salt to taste
- Black pepper to taste
- In a large pot, heat olive oil over medium heat and cook the chicken pieces until golden brown.
- Add onion and garlic, and sauté until fragrant.
- Stir in the rice, making sure it’s coated with the oil.
