Galinhada Mineira is a traditional Brazilian dish combining chicken and rice, perfect for a comforting meal at home.

  • 1 whole chicken, cut into pieces
  • 2 cups long-grain rice
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 1 teaspoon saffron or turmeric
  • 1 bell pepper, sliced
  • 2 tomatoes, diced
  • 1 cup green peas
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and cook the chicken pieces until golden brown.
  2. Add onion and garlic, and sauté until fragrant.
  3. Stir in the rice, making sure it’s coated with the oil.
  4. Add chicken broth, saffron or turmeric, bell pepper, and tomatoes. Bring to a boil.
  5. Reduce heat to low, cover, and let simmer until rice is cooked and liquid is absorbed.
  6. Gently fold in green peas and season with salt and black pepper before serving.
