German Potato Salad – Tangy, Warm & Bacon-Loaded Comfort!

Ingredients

  • 2 pounds small red potatoes
  • 4 slices turkey bacon
  • 1/2 cup diced red onion
  • 1/2 cup apple cider vinegar
  • 1/4 cup sugar
  • 1 tablespoon Dijon mustard
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the potatoes in a large pot of salted boiling water until tender, about 15 minutes. Drain and let cool slightly, then cut into quarters.
  2. In a skillet, cook the turkey bacon until crispy, then remove and crumble.
  3. In the same skillet, add the red onion and sauté until translucent.
  4. In a bowl, whisk together the apple cider vinegar, sugar, Dijon mustard, salt, and pepper.
  5. Add the warm potatoes to the skillet with the onion, pour the dressing over, and toss to combine.
  6. Stir in the crumbled bacon and chopped parsley, then serve warm.

Notes

  • For extra flavor, try adding sliced green onions or chopped celery.
