- 2 pounds small red potatoes
- 4 slices turkey bacon
- 1/2 cup diced red onion
- 1/2 cup apple cider vinegar
- 1/4 cup sugar
- 1 tablespoon Dijon mustard
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Cook the potatoes in a large pot of salted boiling water until tender, about 15 minutes. Drain and let cool slightly, then cut into quarters.
- In a skillet, cook the turkey bacon until crispy, then remove and crumble.
- In the same skillet, add the red onion and sauté until translucent.
- In a bowl, whisk together the apple cider vinegar, sugar, Dijon mustard, salt, and pepper.
- Add the warm potatoes to the skillet with the onion, pour the dressing over, and toss to combine.
- Stir in the crumbled bacon and chopped parsley, then serve warm.
