Gingerdoodle Cookies

A delicious blend of ginger and sugar makes these cookies a must-try for festive gatherings.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup granulated sugar, for rolling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together flour, baking soda, cinnamon, ginger, cloves, and salt.
  3. In another bowl, cream butter, brown sugar, and granulated sugar until fluffy.
  4. Add eggs and vanilla, mixing until combined.
  5. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  6. Roll the dough into balls and then roll in granulated sugar.
  7. Place on baking sheets lined with parchment paper.
  8. Bake for 10-12 minutes until edges are set but centers are soft.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to wire racks.

Notes

  • For a spicy kick, add more ground ginger or cinnamon.
  • Chill the dough for an hour before baking for thicker cookies.
