  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced

Instructions

  1. In a large bowl, mix the diced chicken with olive oil, oregano, garlic powder, salt, and pepper.
  2. Heat a skillet over medium-high heat and cook the chicken until golden brown and fully cooked.
  3. Prepare bowls by layering quinoa, cooked chicken, tomatoes, cucumber, red onion, feta cheese, and olives.
  4. Drizzle with additional olive oil or Greek dressing, if desired, and serve warm.
