  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the diced chicken and season with oregano, garlic powder, salt, and black pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  2. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, feta cheese, kalamata olives, red onion, and parsley.
