Greek Shrimp with Orzo and Feta

  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook orzo pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  3. Add shrimp to the skillet and sprinkle with oregano, salt, and pepper. Cook until shrimp are pink and cooked through.
  4. Add cherry tomatoes and cooked orzo to the skillet. Toss to combine and heat through.
  5. Remove from heat, then top with crumbled feta cheese and fresh parsley.

Notes

  • For extra flavor, add lemon juice before serving.
  • Can substitute shrimp with chicken if desired.
