Ground Turkey and Zucchini Fritters

These Ground Turkey and Zucchini Fritters are juicy, tasty, and perfect for dinner or a snack!

Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis, grated
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, combine the ground turkey, grated zucchini, egg, breadcrumbs, minced garlic, salt, pepper, and Italian seasoning. Mix until well combined.
  2. Form the mixture into patties.
  3. Heat olive oil in a pan over medium heat.
  4. Add the fritters to the pan and cook for 4-5 minutes on each side or until golden brown.
  5. Remove from the pan and let them drain on paper towels before serving.

Notes

  • For extra flavor, add some grated Parmesan cheese to the mixture.
  • These fritters can be served with yogurt or a dipping sauce of your choice.
