- 1 pound turkey bacon
- 1 pound chicken ham
- 2 cups okra, sliced
- 1 large onion, diced
- 1 bell pepper, diced
- 3 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 2 tablespoons Cajun seasoning
- 1 bay leaf
- 1/4 cup vegetable oil
- 1/4 cup all-purpose flour
- In a large pot, heat the vegetable oil over medium heat and add the flour. Stir constantly until the roux is a dark brown color.
- Add the onion, bell pepper, celery, and garlic to the pot, sautéing until tender.
- Mix in the turkey bacon and chicken ham, cooking until browned.
- Pour in the chicken broth, add the okra, Cajun seasoning, and bay leaf, bring to a boil.
- Reduce heat and let simmer for 45 minutes.
- Remove the bay leaf before serving.
