  • 1 pound turkey bacon
  • 1 pound chicken ham
  • 2 cups okra, sliced
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 3 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 bay leaf
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour

Instructions

  1. In a large pot, heat the vegetable oil over medium heat and add the flour. Stir constantly until the roux is a dark brown color.
  2. Add the onion, bell pepper, celery, and garlic to the pot, sautéing until tender.
  3. Mix in the turkey bacon and chicken ham, cooking until browned.
  4. Pour in the chicken broth, add the okra, Cajun seasoning, and bay leaf, bring to a boil.
  5. Reduce heat and let simmer for 45 minutes.
  6. Remove the bay leaf before serving.

Notes

  • Serve with crusty bread or over rice.
  • Gumbo can be made a day in advance for better flavor.
