  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/2 cups grated carrots

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the honey (or maple syrup), applesauce, vanilla extract, and eggs until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just mixed.
  5. Fold in the grated carrots and chopped walnuts if using.
  6. Divide the batter evenly among the cupcake liners.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool completely before serving.
