  • 1 pound chicken breast, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potato, diced
  • 1 teaspoon garlic, minced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 2 cups low-fat milk
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in carrots, celery, and potatoes, and cook for about 5 minutes.
  4. Add garlic and cook for another minute.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and simmer for 15 minutes.
  7. In a separate bowl, whisk together flour and milk until smooth.
  8. Slowly add the mixture to the pot while stirring.
  9. Add peas, thyme, salt, and pepper, and cook for another 5-10 minutes until thickened.
