- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup diced onion
- 2 cups chopped carrots
- 2 cups chopped celery
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- 2 cups frozen peas
- 1 cup milk or dairy-free alternative
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat and add the onions, carrots, and celery. Cook until vegetables are tender.
- Add the chicken breasts, garlic, chicken broth, thyme, and rosemary. Bring to a boil and then simmer for 20 minutes.
- Remove chicken, shred it, and return it to the pot.
- Add peas and milk, cooking for an additional 5 minutes. Season with salt and pepper to taste.
- Serve hot and enjoy!
