Healthy Chicken Pot Pie Soup

A delicious and comforting soup that captures all the flavors of chicken pot pie, but in a healthier and easier format.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • 2 cups frozen peas
  • 1 cup milk or dairy-free alternative
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and add the onions, carrots, and celery. Cook until vegetables are tender.
  2. Add the chicken breasts, garlic, chicken broth, thyme, and rosemary. Bring to a boil and then simmer for 20 minutes.
  3. Remove chicken, shred it, and return it to the pot.
  4. Add peas and milk, cooking for an additional 5 minutes. Season with salt and pepper to taste.
  5. Serve hot and enjoy!

Notes

  • This soup can be made ahead of time and freezes well.
  • Feel free to add other vegetables you have on hand.
