Healthy Coconut and Pineapple Cottage Cheese Muffins

  • 1/2 cup shredded coconut
  • 1 cup crushed pineapple, drained
  • 1/3 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the cottage cheese, shredded coconut, crushed pineapple, honey, vegetable oil, vanilla extract, and eggs. Mix until well combined.
  3. In another bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Divide the batter evenly among the prepared muffin cups.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
