  • 1 cup small pasta (like ditalini)
  • 2 cups chopped spinach

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent.
  2. Add carrots, celery, and zucchini, cooking for about 5 minutes until they soften.
  3. Stir in diced tomatoes, vegetable broth, kidney beans, oregano, basil, salt, and pepper. Bring to a boil.
