Hearty Vegetable Minestrone Soup with Rice or Orzo

A comforting and nutritious soup loaded with vegetables, rice or orzo to warm your soul.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup rice or orzo
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic, zucchini, and green beans; cook for a few minutes.
  4. Add diced tomatoes, vegetable broth, rice or orzo, oregano, basil, and season with salt and pepper.
  5. Bring to a boil, then reduce heat and simmer until rice or orzo is cooked.
  6. If desired, stir in Parmesan cheese before serving.
