  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 2 cups egg noodles
  • Salt to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery; sauté until softened.
  2. Add the garlic and sauté for another minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the cooked chicken, thyme, parsley, and black pepper. Reduce heat and let simmer for 15 minutes.
