  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 2 cups powdered sugar
  • 1/4 cup shortening
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, then stir in the oats until just combined.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are golden and the centers are set.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  9. For the filling, beat together the powdered sugar, shortening, vanilla, and milk until smooth.
  10. Once the cookies are cool, spread a generous amount of filling on the bottom of one cookie and top with another to create a sandwich.

Notes

  • For a richer flavor, you can use brown sugar for the filling as well.
  • These cookies can be made ahead and stored for up to a week.
