Individual Tater Tot Breakfast Casserole Muffins

Deliciously easy mini breakfast casseroles featuring crispy tater tots and savory turkey bacon.

  • 2 cups tater tots
  • 6 ounces turkey bacon, chopped
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy. Drain and set aside.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Grease a muffin tin and layer the tater tots at the bottom of each cup.
  5. Divide the cooked bacon and cheese evenly among the muffin cups.
  6. Pour the egg mixture over the tater tots and fillings until just full.
  7. Bake for 20-25 minutes, or until the egg is set and lightly golden.
  8. Let cool for a few minutes before removing from the tin.
