- 1 cup lentils
- 4 slices turkey bacon
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and chop into small pieces.
- Add onion, carrots, and celery to the pot, and sauté until softened.
- Stir in garlic and cook for an additional minute.
- Add the lentils, broth, thyme, oregano, salt, and pepper. Bring to a boil.
- Reduce heat and simmer until lentils are tender, about 30 minutes.
- Stir in chopped turkey bacon before serving.
Notes
- This soup can be made ahead of time and tastes even better the next day.
- For a vegetarian version, omit the turkey bacon and use vegetable broth.
