Italian Lentil Soup

A warm and hearty Italian lentil soup with turkey bacon and fresh vegetables, perfect for any weather.

Ingredients

  • 1 cup lentils
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop into small pieces.
  2. Add onion, carrots, and celery to the pot, and sauté until softened.
  3. Stir in garlic and cook for an additional minute.
  4. Add the lentils, broth, thyme, oregano, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer until lentils are tender, about 30 minutes.
  6. Stir in chopped turkey bacon before serving.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
