  • 2 cups kale, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Cook until the vegetables are softened.
  3. Stir in the garlic and cook for an additional minute.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the shredded chicken, thyme, salt, and black pepper.
  6. Once it reaches a boil, stir in the pasta and cook according to package instructions.
  7. In the last few minutes of cooking, add the kale.
  8. Serve hot, garnished with Parmesan cheese.
