A delicious and hearty twist on a classic Italian wedding soup with the addition of turkey bacon and chicken ham.

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 2 cups fresh spinach
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add the onion, carrots, and celery to the pot and sauté until softened.
  3. Stir in the garlic and thyme, cooking for an additional minute.
  4. Add the chicken broth and bring to a boil.
  5. Stir in the orzo and cook until al dente, about 8 minutes.
  6. Add the chicken ham and spinach, cooking until the spinach is wilted.
  7. Season with salt and pepper to taste before serving.
