  • 1 tablespoon jerk seasoning
  • 1 cup pineapple, diced

  • 1/4 cup cilantro, chopped
  • 1 lime juice
  • 2 cups cooked rice
  • 1 avocado, sliced

Instructions

  1. In a large bowl, coat the chicken thighs with jerk seasoning and let it marinate for at least 30 minutes.
  2. Cook the marinated chicken in a skillet over medium heat until fully cooked, about 7-10 minutes per side.
  3. While chicken is cooking, prepare the pineapple salsa by combining diced pineapple, red onion, cilantro, and lime juice in a bowl.
