Ingredients

  • 4 medium zucchini
  • 1 pound ground chicken
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center to create a boat shape.
  3. In a skillet, cook the ground chicken until browned. Add marinara sauce, garlic powder, Italian seasoning, salt, and pepper.
  4. Fill each zucchini boat with the chicken mixture.
  5. Top with mozzarella and Parmesan cheese.
  6. Bake in the oven for 25-30 minutes until the zucchini is tender and cheese is melted.
  7. Let cool for a few minutes before serving.

Notes

  • For extra flavor, add fresh basil or oregano on top before serving.
